Peach Fritters

Ingredients
- 1⁄3 cup Butter
- 1⁄2 cup Sugar
- 1⁄2 tsp. Vanilla
- 2 Eggs well beaten
- 2 cups Flour sifted
- 1 tbsp. Baking Powder
- 1⁄2 tsp. Salt
- 3⁇4 cup Milk
- 1⁄1⁄2 cups Peaches chopped
- 1⁄2 tsp. Lemon Juice
- Shortening for deep frying (365°F)
Instructions
- Cream Butter, Sugar, and Vanilla together.
- Add Eggs and beat until fluffy.
- Sift Flour, Baking Powder, and Salt together.
- Add dry ingredients to creamed mixture alternately with Milk.
- Stir Lemon Juice into Peaches and fold into batter.
- Drop by teaspoonfuls into deep fat heated to 365°F.
- Fry 3 to 4 minutes, turning fritters during frying.
- Drain on absorbent paper and serve with whipped cream or sprinkle with powdered Sugar.
Notes
Yield: 4 dozen fritters.
