Peach Fritters

Ingredients
  

  • 1⁄3 cup Butter
  • 1⁄2 cup Sugar
  • 1⁄2 tsp. Vanilla
  • 2 Eggs well beaten
  • 2 cups Flour sifted
  • 1 tbsp. Baking Powder
  • 1⁄2 tsp. Salt
  • 3⁇4 cup Milk
  • 1⁄1⁄2 cups Peaches chopped
  • 1⁄2 tsp. Lemon Juice
  • Shortening for deep frying (365°F)

Instructions
 

  • Cream Butter, Sugar, and Vanilla together.
  • Add Eggs and beat until fluffy.
  • Sift Flour, Baking Powder, and Salt together.
  • Add dry ingredients to creamed mixture alternately with Milk.
  • Stir Lemon Juice into Peaches and fold into batter.
  • Drop by teaspoonfuls into deep fat heated to 365°F.
  • Fry 3 to 4 minutes, turning fritters during frying.
  • Drain on absorbent paper and serve with whipped cream or sprinkle with powdered Sugar.

Notes

Yield: 4 dozen fritters.
