Cream Butter, Sugar, and Vanilla together.
Add Eggs and beat until fluffy.
Sift Flour, Baking Powder, and Salt together.
Add dry ingredients to creamed mixture alternately with Milk.
Stir Lemon Juice into Peaches and fold into batter.
Drop by teaspoonfuls into deep fat heated to 365°F.
Fry 3 to 4 minutes, turning fritters during frying.
Drain on absorbent paper and serve with whipped cream or sprinkle with powdered Sugar.
