Dissolve Sugar in warm Water.
Sprinkle with Yeast and let stand 10 minuets.
Stir in Olive Oil and a third of the Flour.
Beat well until smooth.
Add Salt and gradually stir in enough additional Flour.
Knead until smooth and elastic for 8-10 minutes.
Place in a greased bowl and let rise in a warm place until doubled in bulk (for about 1 hour.)
Punch down Dough, cover, and let rest for 10 minutes.
Form into Rolls and place on greased baking sheet.
Brush with Oil.
Cover and allow to rise until doubled in bulk (for about 1 hour.)
Brush tops of Rolls with Egg Whites.
Bake at 400℉ until well browned (about 15-20 minutes).
